Preheat the oven to 350F.
Peel (optional) & cut peaches into cubes. In a large bowl, combine the cubed peaches with the other ingredients listed under “Filling”. Mix well and pour into a 9″ pie pan or 9″ square pan.
In a medium bowl, combine all ‘Crumble’ ingredients. Mix well to try to get rid of the separation of the powders and oats.
Layer the crumble onto the filing. Bake for 40-45 minutes.
Remove from oven and serve with ice cream.
